Greeeench juice

My go-to healthy smoothie, a great detox drink that keeps me filled up. Rich in antioxidants, its a good smoothie to kick start the day. The best bit is that it does not taste bitter, infact it tastes like regular juice out of a carton, just that its freshly made and the healthier option.

These are the key ingredients I choose to use, the base of greens is parsley(can also use spinach or kale), followed by cucumber, apple, grapes, freshly squeezed orange and/or lemon juice, and a small slice of ginger gives a nice kick to the drink. Add 1-2 cups of water, or enough water to help blend the ingredients. I tend to add ice at the top, or even use frozen grapes instead. It tastes best when its consumed immediately after blending. I use the Moulinex Optiblend 2000 (AAW945) blender to make this refreshing smoothie.

Organic apples. If is difficult to source organic apples, peel off the waxy skin.

Add the leafy greens first, followed by the remaining ingredients in which ever order. Don’t forget to add around 1-2 cups of water, depending on how thick you want it.

Home Made Tabbouleh Salad

 Tabbouleh is a quick and easy lunchtime meal I usually have, especially when I’m on the go. Tabbouleh is a staple food  in a number of Middle Eastern and Northern African countries. It consists of finely chopped parsley, tomatoes, bulgur (cracked wheat), spring onions and seasoned with olive oil, lemon juice and salt. The strong flavours of parsley are complemented by the lemony citrus tang. It is normally served with pitta bread and hummus, or wrapped in a romaine lettuce (the healthier option!). Tabbouleh has become a popular dish.

Not only is it healthy, but it is very filling and tasty too, in addition is considered as a good detox because of the parsley. As introduced to me by a friend; Mariana, this is how I make Tabbouleh salad, as a side with pitta and hummus, the perfect lunchtime meal.

  • Wash and finely chop one bunch of parsley.
  • Finely chop one tomato.
  • Soak 2 tablespoon bulgur in half a cup of boiling water, for 15 minutes, or until the bulgur is softened.
  • Finely chop spring onion (optional)

Mix the parsley, tomatoes, bulgur and spring onion (optional).

Now add:

  • The juice of half an lemon/lime.
  • One tablespoon of extra virgin olive oil.
  • Salt to taste.
